Free fatty acids can be removed from oil by chemical or physical methods. Alkali refining can improve the quality, stability and storage life of oil. However, in addition to neutralizing fatty acids, the lye reacts with a small amount of triglycerides to produce glycerol and soap, thus increasing refining consumption.
